Zucchini Boats and Sweet Potato Tots | 21 Day Fix Recipes

Another AWESOME meal tonight; and to top it all off the kids LOVED it! There are two parts to this recipe, the Zucchini boats themselves and then the sweet potato tots. I modified the original recipe I found by adding some lean ground turkey for more protein and added in just a bit of Feta and Cheddar Cheese to give it some additional flavor! If you are doing 21 Day Fix Extreme you can drop the cheese from this recipe.

These recipes were also great for our 2 year old and 1 year old. They particularly loved the sweet potato tots with some organic ketchup for dipping!

21 Day Fix | Zucchini Boats with Lean Ground Turkey

Makes 3 Servings. Per Serving: 175 Calories, 7 g Fat, 15 g Carb, 16g Protein

  • 3 Zucchinis
  • 2 Tbsp Greek Yogurt
  • 1/4 Tsp Salt
  • 1/4 Tsp Thyme
  • 1/4 Tsp Curry Powder
  • 1/2 Onion
  • 1/4 Tsp Garlic Powder
  • 14 oz can Diced Tomatos
  • 1/2 lb of 93% Lean Ground Turkey
  • 2 Tbsp Grated Cheddar Cheese
  • 2 Tbsp Feta Cheese

Directions

  1. Preheat oven to 375 degrees
  2. Slice Zucchini lengthwise and scoop out the inside to make the “boat”. Save what you scoop out!
  3. Chop onion and scooped zucchini
  4. Saute ground turkey in a pan until browned. Add onion, zucchini and continue to saute
  5. Add salt, garlic powder, thyme, curry and diced tomatoes, saute for 2 – 3 additional minutes
  6. Transfer to bowl. Mix in Greek Yogurt and spoon mixture into the Boats
  7. Sprinkle with cheese
  8. Bake in oven for 30 – 40 minutes, until cheese begins to brown
  9. Serve & eat!

Sweet Potato Tots

Makes 5 Servings. Per Serving: 106 Calories, 1 g Fat, 20 g Carb, 4g Protein

  • 2 Large Sweet Potatoes
  • 1/4 cup whole wheat flour
  • 2 tsp cinnamon
  • 1/2 cup Panko Breadcrumbs
  • 1 egg

Directions

  1. Preheat oven to 375 degrees
  2. Peel & boil sweet potatoes for 10 – 15 minutes, until fork-tender
  3. Mash the potatoes in a bowl and set aside
  4. Whisk egg in a bowl
  5. Mix flour, panko breadcrumbs and cinnamon in another bowl
  6. Mold mashed sweet potato into dice-sized tots. Dip in the egg, then roll in the flour mixture, and place on a baking sheet
  7. Coat with cooking spray evenly
  8. Bake the tots for 10 – 15 minutes, until golden brown
  9. Serve and enjoy!
