So simple, yet so delicious! The Avocado and Tomato really pull an otherwise simple concept together.
Take two slices of whole grain or sprouted toast and pull out the center. Use 1/4 tsp olive oil in a frying pan and turn heat to medium.
Place hollowed toast in pan and put an egg in each hole. The leftover bread can also be pan fried.
While the egg is cooking, slice 1/2 an avocado and 1/2 a tomato.
Serve topped with avocado and tomato. You can add some freshly ground black pepper and a little bit of pink Himalayan Sea Salt! Enjoy!
