My good friend and teammate Kerri made this and posted it on Facebook the other day! I took the recipe and made a few minor tweaks! So good! My husband loved it .. we eat so much chicken in this house so it’s nice to switch it up every so often go ground lean turkey. This is also a great cold weather meal. Something about a skillet hash type of meal really goes great in the winter!
I didn’t include any sides with this – but this would be good topped on Quinoa or rice if you wanted to add some starch. You could also serve this with some tomato sauce, that would be delicious also! The awesome thing about this recipe is it’s basically infinitely flexible!
Makes about 6 servings!

Ingredients:
- 2 – 3 cloves garlic
- 1 – 1.5 lb lean ground turkey (93% or more)
- 1 onion (diced)
- 1 yellow bell pepper (diced)
- 1 – 2 large sweet potatos (cubed, about 1/2″)
- 1/2 cup mozzarella cheese
- Fresh Basil (optional)
- Salt, Pepper, Olive Oil
Directions:
Preheat the oven to 350 degrees. While the oven is preheating, saute the garlic in the pan for about 1 – 2 minutes over medium heat with a little olive oil.
Add the ground turkey to the pan and brown, about 10 minutes. Add diced onions and pepper, cook another 10 minutes until onions are translucent and soft.
Add the sweet potato, salt and pepper. You can add some additional spices here also – like chili powder, cumin, curry, etc. Make it yours 🙂 Or keep it simple!
Cover and cook for 10 more minutes until sweet potato is soft.
Transfer to a baking dish, and top with cheese. Or if you have an oven safe skillet, you can put that right in the oven!
Bake uncovered for 5 – 10 minutes until cheese is bubbly.
