As many of you know today was Day 1 of the Ultimate Reset for me! REALLY looking forward to restoring my body and bringing it back to it’s most NATURAL state! Of course that means I need to make some sacrifices for the next 21 days, but it’s all worth it because I’m ADDICTED to the way I feel when I am eating healthy and taking good care of my body and I know it’s just what my body needs. Ever since returning from Cancun my eating hasn’t been as clean and I FEEL it! So time to get back on track.
Today’s lunch was a Microgreen Salad and I also had a side of miso soup! The salad was HUGE and had so much on it and I LOVED the homemade dressing I made to go with it.
I finished eating and looked at my husband and said, “OMG I am STUFFED!” and he’s like……..”Well that’s a miracle lol!” He knows I’m a foody!! But if I keep myself full like this for the rest of the program then the Ultimate Reset ain’t got nothin on me!
Ingredients:
- Bulk or bagged mixed greens, which may include lettuces, baby kale, mizuna, radicchio, etc.
- 1/4 cup shredded carrot
- 1/4 cup chopped cucumber
- 1/4 cup sliced red bell pepper
- 1/4 cup sprouts (like radish, alfalfa, or broccoli)
- 1/4 cup chopped tomato
- 1/4 cup jicama
- Fresh herbs (like basil, cilantro, parsley, dill)
- 1/3 cup toasted seeds and nuts (like cashews, pecans, pumpkin seeds, or sunflower seeds)
Basic Vinaigrette Dressing
What you need:
- 1/2 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- 1 tsp. Himalayan salt
- 1 tsp. ground pepper
- 1 tsp. unfiltered honey or raw agave
- 2 Tbsp. fresh lemon juice
- Optional: 2 tsp, fresh herbs: basil, oregano, parsley, or dill
Mix all together.
