I’ve been REALLY enjoying the recipes that come with the 21 Day Fix Extreme. They leave me feeling full and they taste so good – you would never know they were a part of a nutrition program, especially a program as intense as the 21 Day Fix Extreme.
This recipe comes in the 21 Day Fix Eating Plan and I made it last night for dinner. It was absolutely delicious. The only thing I changed is I had to add a little more beef broth in because with the single cup it calls for it mostly boiled off and it was not as soupy as I would like. It was a also surprisingly spicy given the 1 TSP of pepper; I like spicy so I was good with that but if you are sensitive to spice I might back of jusssst a bit on the pepper.

21 Day Fix | Hearty Beef and Butternut Squash Stew
Makes 6 Servers – Each Serving is 1-1/4 Cups
- 1 tsp. olive oil
- 1.5 lbs raw lean beef stew, boneless, 2″ cubes
- 1 medium onion, chopped
- 1/2 green bell pepper, chopped
- 1/2 red bell pepper, chopped
- 4 cloves garlic, crushed
- 2 medium tomatoes, chopped
- 1 cup low-sodium organic beef broth
- 1 bay leaf
- 1 tsp sea salt
- 1 tsp black pepper
- 2 cups cubed butternut squash
- 1/4 cups leaf parsley
Directions
- Heat oil in a large saucepan over medium-high heat
- Add beef and cook, stirring for 4-5 minutes until beef is browned
- Add onion & bell peppers and cook for 4 – 5 minutes until onions are translucent
- Add garlic and cook for an additional minute
- Add tomatoes, broth, bay leaf, salt and pepper. Bring to a boil and reduce heat to medium-low; cover and cook for 40 minutes
- Add squash, and continue cooking, stirring occasionally, for 10 – 15 minutes, and beef and squash are fork-tender
- Remove bay leaf, top with parsley, and serve!
