Chicken Salad and Apple with Tangy Dressing | Clean Eating Recipes

One of my favorite things to eat for lunch is a nice healthy salad. But I can’t stand a boring salad – you know, some lettuce with a piece of chicken on it. This salad is full of flavor, and because it’s made with greek yogurt instead of mayonnaise it’s really light and tastes delicious. The apples give it a good crunch and the tangy dressing is delicious!

Like any salad, this is infinitely flexible – you could add in walnuts or slivered almonds, or skip the apple and do cranberries. You could do a yogurt-based dressing instead of the tangy one, or swap out the cole slaw base for your favorite lettuce. (I’ve made this on Arugula and Spinach before and it’s been awesome!). You can also swap the chicken for tuna and make this a tuna salad salad. LOL.

Chicken Salad Variation
Here is a variation that I made with Arugula, some watermelon, and turkey bacon in the chicken salad!

Chicken Salad and Apple with Tangy Dressing Ingredients (makes 1 Serving)

  • (2) Tbsp Rice Wine Vinegar
  • (1) Tbsp Olive Oil
  • (1) Tsp Soy Sauce (or liquid aminos)
  • (1) Tsp Dijon Mustard
  • Salt & Pepper to taste
  • (2) Cups Coleslaw Mix (or your lettuce of choice)
  • (1) Small Apple, chopped
  • (1) 5 oz Can of Chicken (or Tuna). You can also shred cooked chicken breast.
  • (1/4) Cup Greek Yogurt
  • (1) Stalk Celery, chopped
  • (4) Slices Onion, chopped
  • (1/2) Tsp Garlic Powder
  • (1/2) Cup Cherry Tomatos, halved

Chicken Salad and Apple with Tangy Dressing – Preparation Directions

Prepare the dressing by combining the vinegar, olive oil, soy sauce, and mustard in a bowl and whisk to blend, set aside.

Prepare the chicken salad by draining the can of chicken and then combining the chicken with the greek yogurt, celery & onion, garlic powder, salt, pepper, and (1/2) of the apples. Mix well.

Toss the coleslaw with the remaining apple. Place the chicken salad mixture on top, drizzle with the dressing, and top with cherry tomatoes. Enjoy!
